I watched the first tutorial and I notice that you need to select either Lightroom v3 or v4. I assume this is for compatibility with the metadata. I don't use Lightroom, but rather Capture One Pro for my Raw editing. Does LRT work with C1? Are there any gotchas?

No, C1 ist not supported. LR3, LR4, LR5 or Adobe Camera RAW/Bridge will do.
