I am rather new to all this that´s why I have a fairy easy question. Now that I have my beautiful timelapse clips - could somebody recommend the most convenient way to stitch those separate clips together and add music without quality loss ? I tried some programs for that but nothing was really satisfying.

You've to try the different for your plarform available Video Editing Software within the range of the price you can afford and none of this information are given. I use Adobe Premiere Pro CS6.
