Christmas tree installation timelapse

Hi guys,

Going to record a timelapse of people putting up a christmas tree installation. Scheduled to last for about 4 hours.

Only get one chance at this, so need to make it right. Will use my canon 5d3 with the battery grip, should be enough for 4 hours.

In terms of settings, was thinking of taking one pic every 8 seconds, but this might be too much?

Shutter speed of 1s to blur the people as they are working. It will be through the night so the light won't change.

Anything else I should be thinking of?

I'd go for a way shorter interval, you can still speed it up afterwards.
I think depending on the focal length, I'd go for 3 secs interval and 2 secs exposure. If you use longer focal lenght, even shorter intervals.
