Hi everyone,
At the moment I'm shooting timelapses with the Canon EOS R; regarding the CR3, once you download the CR3 to the PC and convert them to DNG's is it OK to delete the original CR3, to save PC space?

DNG preserves the Raw information. If you decide to convert to DNG, normally it doesn't make sense to keep the original Raw files also.
Consider, that the DNG workflow will be slightly slower then working on the original Raw files. That's why I mostly don't convert to DNG.
