With the LRT Pro Timer, is there anyway to have the signal trigger more than a single picture. Specifically, I was wondering if I set Auto Exposure Bracketing on my camera (Nikon Z8), if LRT Pro could send a signal that would trigger all 5, 7, or 9 AEB shots to be taken with a each signal?

You would need to use the exposure time in the Timer's Astro/Bulb Mode. Set the Exp Time so that it covers the latest necessary time to hold the trigger for all shots in one interval.
