It took about 7 attempts before I was happy with the results, but I've finally managed a decent day-to-night time lapse!

Quick side note:
If you're here browsing videos, wondering if LR Time Lapse is worth the money...look no further. It's worth every-single-penny. The amount of time that this software has saved - especially for a shot like this - is easily worth more than the purchase price.
I also have to thank Gunther for the stellar support when I initially had issues receiving the software key (filters maybe? still don't know what happened there). Not only was his response super-fast, but even when I came out in frustrated-impatient-guy mode, he was kind, apologetic, and had the issue fixed immediately. It's nice to know there's a person who cares on the other end! Thanks for all your hard work, Gunther!!
