I think some of it has been done using video footage (panning away from the Hollywood sign and going around a corner at 1.14), but is the rest just cropping in post production?

Your question is very open ended, you could be referrng to almost anything in the video. Pointing to a specific "point in the timeline" would help, however, let me guess.

If you are referring to the Hyperlapse , just Google Hyperlapse.
If you are referring to the pans and zooms, that is done in a NLE editor, Vegas Pro, Premier Pro, After Effects, etc.
