When I use dslrdashboard on my iPhone6S, I must turn off the feature for "auto-lock," or else dslrdashboard disconnects from my camera as soon as the phone screen darkens. So, I turn the brightness on the phone display all the way down to save power. But is there a way to turn the brightness off completely without having the camera disconnect? Thank you

I don't think so, since iOS will stop the app, when it goes sleeping. I'd recommend using a power bank to power the phone if you fear that the battery won't last long enough.
