It would be nice to be able to change the export render to include multiple changes to the speeds of the timelapse, ex: Fast / Slow / Fast

This is not really in the scope of LRTimelapse. It's something you would rather do in Video processing, when cutting the clips to a film. Every video editor offers this feature. A very good, free, solution would be Davinci Resolve.
