Just wondering, every time I shoot a Hollygrail the Whitebalance does get really off when set to a fixed value. The other day I put it on AWB and the result was ok, but not sure if it really is ok to have it on AWB or better have it fixed and fix it later

I recommend to shoot with a fixed white balance. When editing your will then keyframe the WB with LRTimelapse / Lightroom.
Auto WB is not a good idea.
