So I went through the whole process to generate a timelapse video, I think I might have used too much motion blur. Is there a short and easy way to get to that menu again or do I need to export from LR again?

Just do file / render in LRT and render again with different settings!

... and it will be saved with a different filename depending on the settings. So you can have multiple videos of the same sequence and can compare them.
