Why is LRT writing in the .dng files?
It doesn't alter proprietary raw files like .pef
Isn't .xmp files enough to save changes in?
I want my raw files from the camera to be untouched.

LRTimelapse doesn't write into DNG files.
But Lightroom does. It's per Adobes definition, that for DNG files, XMP information should be written inside the files.
I do not support this.
That's why LRTimelapse writes Sidecar XMPs also for DNG. Both programs will read whichever information is newer. Thats why the communication works nevertheless.
So please blame Adobe, not me.

But where does LR get this information that's in the .dng file from?

As I said, both programs read whichever information is younger, the embedded or the sidecar xmp. Otherwise they wouldn't be able to communicate.
