Running on a 2019 Mac Pro (7,1) with Vega II Pro GPU, 144GB of RAM, with an Afterburner card, and a 28 core Xeon CPU (W-3275).
LRTimelapse maxes out CPU usage. If the system is not totally stable, it might overheat and crash. Try lowering the amount of parallel threads in the expert settings in Lrtimelapse. Do it incrementally and test.

I'm only running with 28 threads, despite the CPU having 56 threads. Temps never exceed 52C (which is far lower than the chip's TDP). Also, the CPU is never maxed out by LRT.
This is nothing that other users yet reported. Since LRTimelapse runs inside a virtual machine, it cannot crash the OS. If the OS crashes while using LRTimelapse, it's an instability of the system or OS.
