I would say it depends on what effect you are aiming for with the people moving around in the market square, and the only way to know of all the possible effects is to start experimenting, because there are many approaches and effects at your disposal, depending on your gear. I would start with shutter exposure set at 2 seconds with 3 or 4 second interval, or as quick an interval as your camera can handle without any previewing on the camera. You'll get a cool ghosting effect with the people moving around. If people are mostly standing, you might want to slow down shutter even more, if possible. If they're walking too fast, speeding up shutter will prevent them from getting too spread out in the image to the point of not being recognized. You'll probable need an ND filter if you're shooting under daylight. Good luck!
