Hello, quick question because I'm curious. When you have finished a project, do you throw away your RAW/jpg work-files?

So far I've kept all mine, but as it is close to 2,5 TB now I'm getting short on space..

No, never. I those are your originals. Hard-drive space ist really cheap, don't be frugile here. You might regret it later.

I keep my files as there will be development in software in the future and I will be able to Re process
